I’m not sure about this but I don’t think carving chocolate is a good idea. I cannot think of any chocolatier I have met (not a lot admittedly) who carved chocolate.
I’ve never milked a goat but it does not sound all that hard. StilI I’d start out with a regular one before moving to Shub-Niggurath. The final post should be interesting, indeed.
I wasn’t clear. The idea would be to make an original in sculpey, then drop a silicone mold from that, pour chocolate in the silicone. Just like I do with the soaps. Most chocolate molds are metal, so they can use a cool steel mold and rotationally cast chocolate into it, to get the proper bunny-shape. I want to make solid chulhus out of white chocolate with a bit of green added…

I had been wondering why you needed a sculptor. Now I know. Cthocolates are a very good reason.
