    So much yellow.

Somehow, this brought in my mind one use of roasted dandelion roots, as a coffee substitute (during war time). I’d like to try it one day. The best stuff of that kind I’ve drunk so far has been “Inka” brand grain and chichory drink, which is sold as powder and used like instant coffee. Sometimes it’s fun to drink hot drinks in the evening and to be able to sleep (I have a fairly strong response to caffeine).

The roasted roots make a lovely addition to coffee. Dandelion roots are also well known for being a digestive aid, too. I haven’t tried the roasted roots on their own, beverage wise. I’ll have to do that.
