The braised lamb shanks will provide a savory sauce for the potatoes. I’m guessing there’ll be a green salad with a vinaigrette dressing. And dessert? More motherfucking Jamesons, of course.

After the shanks are falling off the bone, they get removed from the braise. After taking off all the fat from the braise, it is pureed in a blender to make the sauce, and then finished with a litle bit of cognac.
